Today in most restaurants if you order Caesar Salad you get romaine lettuce, the only original and true ingredient, then some gloppy sauce with mayo, cheese, and a lot of croutons – about as far as you can get from the real thing. Here is my version, you can’t beat it. Fabulous!
* 1 lg. head romaine lettuce, cut into 3’ pieces
* 1/3 can flat anchovies
* 2-3 Tbsp. olive oil
* 3 lg. cloves garlic, crushed
* 3-4 Tbsp. freshly and coarsely grated parmesan cheese
* 1 lg. egg
* liberal ground fresh black pepper
- Wash the romaine, cut, and reserve
- In large mixing bowl put garlic pieces, anchovies, olive oil with 5-6 grindings black pepper
- Mash the anchovies medium-well and the garlic (just to open up the garlic – remember, you are not chopping the garlic, just putting in whole garlic cloves which have been crushed once, then opened up for flavor)
- Add the chilled romaine, grate the parmesan over the top
- Boil the egg for ONE MINUTE, no more
- Crack, place on top of mixture
- Mix very well, adding ground pepper before serving.
