This is by far one of the best salads I have ever made; and when you add avocado and shrimp, it is absolutely the finest. The combination of tastes – the nutty walnuts, creamy avocados, sweet shrimp, and salty anchovies – is near perfect
Boston Lettuce with Egg, Anchovy, Walnuts, Avocado, and Shrimp
This recipe is for one portion; but you can easily double all the ingredients and it will come out fine.
* 5-6 large leaves of Boston Lettuce
* 1 hardboiled egg, quartered
* 2 flat anchovies, coarsely chopped
* 4-5 walnuts, broken into medium pieces
* 1/2 ripe avocado, sliced
* 2-3 cold cooked shrimp, cut into 1/8” pieces
* 2 Tbsp. olive oil
* 2 tsp. red wine vinegar
* salt, ground pepper to taste
- Arrange the lettuce on a large plate
- Place the ingredients (egg, anchovy, shrimp, walnuts, avocado) on top, mixing slightly
- Drizzle the olive oil and vinegar
- Grind fresh pepper and add salt to taste
- Serve (do not toss salad and mixture)
