This is a classic Chinese recipe, but I have figured out a way to make it simple with few steps. It is delicious and does not take a lot of work.
Chinese Chicken with Walnuts and Red Pepper
* 1 1/2 lb. frozen boneless, skinless chicken breasts
* 1 red bell pepper
* 3/4 cup walnut halves
* 2 lg. Tbsp. grated ginger
* 1 lg. onion, chopped
* 5 lg. garlic cloves chopped
* 1 lg. bunch fresh basil, chopped\
FOR MARINADE
* 2 Tbsp. olive oil
* 2 Tbsp. soy sauce
* 1 tsp. sesame oil
* 1 Tbsp. honey
* 1 Tbsp. balsamic vinegar
FOR SAUCE
* 2 Tbsp. olive oil
* 2 Tbsp. soy sauce
* 1 tsp. sesame oil
* 2 tsp. honey
* 1 Tbsp. balsamic vinegar
* 1 lg. tsp. corn starch mixed with 2 tsp. water
- Slightly thaw the chicken breasts in warm water
- Cut into 2” pieces (it is easier to cut when meat is slightly frozen)
- Place chicken pieces in the marinade and let sit for 5 hours (approx.)
- Sautee the red pepper, garlic, onion, and basil in olive oil until soft; reserve
- Roast walnuts in iron skillet dry until browned, reserve
- Reheat the skillet to highest heat and sauté half the chicken until brown, tender
- Repeat with the other half of the chicken
- Add the vegetables, walnuts and sauce, heat and stir
- Grind fresh black pepper, garnish with basil leaves, and serve.
